New York Bagels

Although bagels have become a global phenomenon, they never taste quite the same when removed from their New York “terroir.” The DNA for the bagel originated in Poland, a recipe brought to the Lower East Side of New York by Jewish immigrants. Some experts suggest that the city’s tap water, an essential ingredient in the bagel-making process, may be what sets the New York version apart from the rest. Others correctly note that the production process isn’t precisely replicated most other places.

Bagels from Russ & Daughters, a New York City landmark since 1914, are the real deal. They’re first boiled in water and then baked in a revolving oven.
